Back by popular demand after a fantastic dinner last year, The Adobros, headed up by chef Mark return to Margate for a late May weekend of delicious eats and fantastic beats, as part of their 2026 Summer Series.
Drawing upon much-loved family recipes, various regional cuisines and his experiences of cooking in London, Mark has created an experience that he hopes showcases the best of the Filipino food culture he grew up with: the warm welcome, the social sharing, the festive feasting and the distinctively delicious flavours of the Philippines.
A four-course meal that introduces you to the culinary delights of the Philippines: the cheek-puckering tamarind tang of sinigang, translated into gazpacho form; the zing and immediacy of kinilaw, a type of raw fish crudo that is born of Filipinos' relation with the sea; the umami-rich sourness of pork belly adobo, an ode to our unofficial national dish of braising in vinegar; the freshness of sweet and tart heritage tomatoes in a coconut vinegar ensalada; and the decadent creamy lusciousness of leche flan, the cherished Filipino crème caramel.
And, as part of Mark's mission to make Filipino cuisine as accessible to as many people as possible, vegan alternatives will be available on the night (please specify when booking).
