Join Komorebi Kitchen for an evening of seasonal cooking, centred around vegetables and locally foraged food at Turner Contemporary in Margate

Traces brings together six courses shaped by locally foraged ingredients, fermentation, preservation, fire and Japanese cooking techniques.
Each course explores a different kind of trace, from the landscape an ingredient comes from, to the marks left by fire, the transformation that happens through time, and the memories and places that influence the way we cook.
The evening extends beyond the plate, bringing together food, sound and artistic collaboration to create a shared experience that is unique to the space and the people within it. Sounds from the surrounding landscape, natural materials and temporary artistic interventions will become part of the evening, creating an atmosphere that changes and unfolds alongside the food.
Drawing on the changing landscape around us, the menu moves between familiar and unexpected flavours, using preservation and fermentation to transform seasonal ingredients and extend their life beyond the moment in which they are found. The supper itself is temporary food is created, experienced and then disappears; sounds are heard and then are gone; and traces are left behind.
Expect a thoughtful six-course dining experience that highlights the richness and versatility of local ingredients and the quiet rituals of gathering, preparing and sharing food, alongside sound and artistic elements created specifically for the evening.
